Keeping your heart healthy is always on our mind. These chicken patties are a great alternative to beef burgers and taste wonderful with or without the bun. To make it extra healthy, you can grate a small zucchini into the chicken mixture (just add a dash more of salt and pepper if you choose to add it in). It tastes great with or without the zucchini.

  • 2 pounds ground chicken
  • 1 red onion, finely diced
  • 2 -3 tablespoons fresh cilantro
  • 5 large fresh basil leaves, finely chopped
  • 2 teaspoons lime rinds (grate from 1-2 limes)
  • 3-4 teaspoons of olive oil
  • 1 tablespoon gluten free Thai peanut sauce
  • 1 teaspoon gluten free soy sauce
  • 1 teaspoon garlic powder
  • 1 egg
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ginger powder
  • 1 1/ 2 teaspoons ground cumin
  • 1/4 cup flax seed meal
  • Salt and pepper to taste
  • The juice of 1 lime

In a large bowl combine chicken, egg, onion, cilantro, garlic, ginger, basil, lime rinds and juice, cumin, chili, soy sauce, peanut sauce, flaxseed meal, salt and pepper. Wet your hands, then form approximately 2.5 inches thick patties (about 16 total). The mixture will be wet and runny…worry not; it will all hold together! Heat olive oil in a skillet over medium to high heat. Add patties, about 4 at a time. Reduce to medium low heat and cook for 5 minutes. Flip them and cook for another 5 minutes (to make sure the meat cooks all the way through, cover the patties with a saucepan lid as it cooks on each side). Repeat with the remaining patties, adding olive oil when needed. Serve warm with Sriacha sauce or Thai sweet chili sauce.
