As all of you must know by now, since the beginning of this year I’m trying to eat a diet low in sugar and carbs. I have to say its been challenging. I really miss eating bagels, muffins and especially pancakes. I tried a wonderful recipe for low carb pancakes and thought i’d share it with you just in time for the weekend. I hope you guys like it. Low carb gluten free pancakes

  • 1/2 cup coconut flour
  • 1/3 cup almond flour
  • 1/3 cup coconut milk
  • 4 eggs
  • 1 tablespoon coconut oil
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter or canola oil
  • 2 tablespoons unsweetened coconut flakes (optional)
  • 1 small pinch salt
  • maple syrup or honey

In a bowl, mix coconut flour, almond flour, baking powder, salt, cinnamon and coconut flakes (if using). In a separate bowl, mix eggs, vanilla, coconut oil (make sure its melted) and coconut milk, then add to the dry ingredients. Mix until batter is smooth. If mixture is too thick, add a little more coconut milk. Heat a pan over medium heat and add butter or oil. Spoon the batter on to the pan (about 1/4 cup at a time) and cook until golden brown on each side (about 1-2 minutes on each side). Pour maple syrup or honey on top and enjoy!
