I finally ventured out of my comfort zone and cooked salmon a few days back. I always would avoid cooking fish because I always overcook it. Salmon has so many health benefits, so I decided to give it another try. I’m glad I did, it came out beautifully. This recipe is simple and so easy to make. I hope you guys enjoy it! - 3 6 ounce salmon fillets
- 1 1/2 tablespoons olive oil
- 1 1/2 tablespoons dried basil
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1 tomato sliced thin
- 2 tablespoons grated Parmesan
- 1 teaspoon rosemary
- Salt to taste
- Cooking spray
Preheat oven to 375 degrees F (190 C). Line baking sheet with aluminum foil and spray nonstick cooking spray. Put the fillets on the foil; sprinkle basil, salt, black pepper, rosemary and garlic powder; drizzle olive oil, top with tomato slices and sprinkle with Parmesan cheese. Bake in the oven until the Parmesan cheese is melted and brown on top; approximately 20 minutes.
