I finally ventured out of my comfort zone and cooked salmon a few days back. I always would avoid cooking fish because I always overcook it. Salmon has so many health benefits, so I decided to give it another try. I’m glad I did, it came out beautifully. This recipe is simple and so easy to make. I hope you guys enjoy it! Baked Salmon

  • 3 6 ounce salmon fillets
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons dried basil
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 tomato sliced thin
  • 2 tablespoons grated Parmesan
  • 1 teaspoon rosemary
  • Salt to taste
  • Cooking spray

Preheat oven to 375 degrees F (190 C). Line baking sheet with aluminum foil and spray nonstick cooking spray. Put the fillets on the foil; sprinkle basil, salt, black pepper, rosemary and garlic powder; drizzle olive oil, top with tomato slices and sprinkle with Parmesan cheese. Bake in the oven until the Parmesan cheese is melted and brown on top; approximately 20 minutes.
