Ingredients
  • 1 sweet potato
  • 1 can organic navy beans
  • ½ small white onion
  • 2 Tbsp tahini
  • ¾ tsp apple cider vinegar
  • 1 tsp garlic-fresh or powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ⅓ cup nutritional yeast or ½ cup almond flour
  • 1 cup kale or spinach-chopped
  • 1 Tbsp of organic unrefined coconut oil
  • Gluten free panko bread crumbs

 

Directions
  • Bake and peel the sweet potato
  • Strain beans-rinse with hot water so they soften 
  • Add beans and sweet potato in a large bowl and mash with a fork
  • Chop the onion
  • Add all other ingredients to the bowl and mash well.
  • Place bowl in the fridge for 30 minutes
  • Preheat oven to 425 degrees
  • Form patties
  • Coat in gluten free bread crumbs
  • Heat skillet with coconut oil to high
  • Brown on each side
  • Place on baking sheet and bake for 15 minutes
