Ingredients
  • 1/2 cup coconut flour
  • 1/3 cup almond meal or ½ cup almond flour
  • 1 1/2 teaspoons baking powder
  • 4 organic, free range eggs
  • 2 tablespoons coconut oil, melted
  • 1/3 cup milk (raw cow’s or coconut)
  • 1 teaspoon vanilla extract
  • ½ tespoon Himalayan salt

 

Directions
  • Mix all the dry ingredients into a bowl
  • Slowly whisk in the wet ingredients
  • Mix until the batter is smooth.
  • Heat a large skillet over medium high heat. Add 1 Tablespoon of coconut oil
  • Add ¼ scoop of batter
  • Cook for about a minute on each side or until light brown
