With the holidays just around the corner, I thought I should start sharing some dessert recipes with you guys. These brownies are fabulous, and you only need 2 ingredients, chocolate hazelnut spread and eggs! That’s it! And if that wasn’t impressive enough for you, they are also gluten free and casein free (if you use hazelnut butter with no milk)! Amazing, right? I hope you enjoy these as much as my family does. - Gluten Free & Casein Free Brownies
- 1 cup chocolate hazelnut or peanut butter (I used Justin’s Chocolate Hazelnut Butter)
- 4 large eggs
- 2 tablespoons powdered sugar
Spray an 8×8” baking pan with cooking spray. Line the pan with parchment paper so that the edges hang over the sides by at least 2 inches all around. Spray the parchment with cooking spray as well. Preheat oven to 350 degrees. Using a stand or hand mixer, beat the eggs using a whisk attachment on medium-high speed for 7-8 minutes. The eggs should be a pale yellow color and triple in volume. Warm the chocolate spread in the microwave for 50 seconds or just until slightly above room temperature. Give it a stir so it can cool slightly, then slowly add the chocolate spread into the eggs. With a spatula, gently fold the eggs into the chocolate mixture until fully combined. Immediately pour the mixture into the baking pan and bake for 25-30 minutes. Once completely cool, dust the brownies with powdered sugar and cut into squares. Enjoy!
